Start early in the morning and drive down the road.
There is usually a squirrel, possum or an armadillo or two. Be sure they are fresh. Return home.
Grab a large stock pot and fill 3/4 way with water, chop several onions, some celery, pepper, Cajun seasoning, (be liberal), poultry seasoning, some thyme leaves, crushed red pepper (fresh if you have it but dried will do) and marjoram. Put in stockpot and start to boil.
skin and clean your road kill and add to pot. Boil till tender and falling apart. Add more seasonings as needed for taste and smell. Turn down to simmer
Grab a iron skillet and some lard about 2 table spoons and 2 table spoon of flour. Heat skillet add lard and flour and brown to a caramel color, don't burn it but come close. Set aside. You just made a rue
Next put another small pot of water on to boil and add rice. Cook till done. Make it good and sticky.
Now in your large stock pot with the onions and road kill, slice up a pound or two of Polska Kielbasa (Cajuns use Andolete but is probably a bit strong for most)
Add to Road Kill Pot and continue to simmer when the sausage is just about done add the Rue,
add about 3 table spoons of Filet (ground sassafras leaves)
Cook to a rolling boil and then lower heat to low. Simmer about 3hours
Add Garlic, Cajun Seasoning to taste while simmering.
About 5 minutes before serving add 1TBLS of Filet and bring to boil, once boiling turn off heat.
It is Ready to eat!
Place rice in bowls, liberally ladle on the Road Kill Stew; serve with crackers and Boones Farm wine.
Oh yeah, if you don't have any luck finding fresh Road Kill then by all means substitute a couple of chickens.
